Sweet Potato Breakfast Bake

You’ll Need:

  • 3 sweet potatoes (microwaved and sliced)
  • 2 red onions (sliced)
  • 2 tablespoons coconut oil
  • 2 large handfuls of spinach
  • Salt and pepper
  • 3 tsp smoked paprika
  • 1 tbsp of balsamic glaze
  • 3 tsp fresh parsley
  • 2 tsp dried chilli
  • 4 free-range organic eggs

The How To:

  1. Preheat your oven to 200° 
  2. Microwave your sweet spuds for about 7 minutes. Allow to cool so your able to handle them and cut into thickish slices (about 2cm).
  3. In a frying pan sauté onions in coconut oil. After about 3 minutes add the balsamic glaze and fry until caramelized. Remove from heat and set aside.
  4. Grab an oven proof dish. Layer bottom with sweet potato and half the parsley. Add spinach, then onions. Crack the eggs into your dish and add the remaining ingredients.
  5. Bake for about half an hour until eggs are cooked through.
