Avocado and Poached Egg Bagel

I know it’s been done to death but seriously, in my eyes this is the breakfast to beat all breakfasts. Simple, delicious and riddled with nutrients. 

You’ll Need:

  • 1 whole wheat multi-grain bagel (halved and toasted)
  • 1 ripe avocado
  • 2 eggs
  • A smidge of butter
  • Chilli flakes
  • Dried parsley
  • Smoked paprika
  • Salt and pepper
  • Balsamic glaze

The How To:

  1. My main man Jamie Oliver instructs you to make poached eggs like THIS. His word is law. Listen to him.
  2. Toast your bagel and butter it. Halve, de-stone and scoop the flesh of your avocado onto the bagel.
  3. Place your poached eggs on top. Sprinkle the chilli, parsley, paprika and seasoning over your eggs and finish by drizzling the balsamic glaze.
