Oatmeal Muffins



Make them night before for an on the go breakfast.


You’ll Need:

  • 2 eggs
  • ¼ cup olive oil
  • 1 cup soft brown sugar
  • ½ cup applesauce
  • 1½ cups almond
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 1 tbsp cinnamon
  • 3 cups rolled oats
  • 1 tbsp ground flax seed
  • 1 tbsp shelled hemp seed
  • 1 tbsp milled linseed
  • 2 tsp baking powder

    Topping ideas:

  • Flaked almonds
  • Chopped walnuts
  • Dark chocolate
  • Blueberries
  • Blackberries
  • Raisins

The How To:

  1. Preheat the oven to 180° and line a cupcake tin with muffin cases.
  2. In a large bowl mix the eggs, oil and sugar until sugar dissolves. Then add the milk, vanilla, cinnamon, applesauce and mix thoroughly. Once combined add the oats, flax, hemp, linseed and baking powder.
  3. Fill the muffin cases with your oaty mixture and scatter with your choice of toppings.
  4. Bake for 30 minutes. Allow to cool on a wire rack. Store in a tin or zip lock bag at room temperature for up-to 3 days.
