BBQ Sweet Potato Sliders with Roasted New Potatoes

A simple impressive crowd pleaser


You’ll need:

  • 1 large sweet potato
  • 1 tsp olive oil
  • Salt and pepper
  • ½ cup of BBQ sauce (I used store bought BUT you can find an AMAZING homemade one HERE)
  • Toasted vegan buns
  • 8-10 new potatoes (halved)
  • 1 tsp rosemary
  • 2 tbsp vegetable oil
  • Salt and pepper
  • 1 tsp smoked paprika

Topping ideas:

  • Vegan cheese
  • Mixed leaves
  • Onions
  • Vegan slaw

The how to:

  1. Pre-heat the oven to 200°C
  2. Halve your new potatoes and microwave for 10 minutes. Add to an oven proof dish with the vegetable oil, rosemary and seasoning. Make sure the potatoes are evenly coated. Roast for 15-20 minutes until golden brown.
  3. Meanwhile pop your sweet potato in the microwave for 5 minutes. Halve it and scoop the flesh into a pan. Add the BBQ sauce and olive oil.
  4. Cook for about 5 minutes stirring regularly.
  5. Once the sweet potato is smooshy and smelling of sweet BBQ greatness remove from heat. If it’s done before your roasties never fear just reheat on the hob for a minute or 2 before creating your slider.
  6. When your new roasties are crisp and golden remove them from the oven and add to your plate.
  7. Scoop a big dollop of the BBQ sweet potato on a toasted bap with the toppings of your choice. Serve with a side salad garnish.
