Banana Pancakes

Hangover cure. I promise.


You’ll need:

  • 1 cup flour
  • 1 tbsp brown sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 sprinkle of cinnamon
  • 1 cup soya milk
  • 1 ripe banana (the black the spots the sweeter the banana)
  • 1 tsp vanilla
  • 1 tsp of vegan butter (for cooking)

The how to:

  1. Mix everything together in a bowl
  2. Decant mixture with a ladle into a thinly greased pre-heated pan and cook each pancake over medium heat until lightly browned.

I enjoyed mine with lemon juice and fresh berries.
