Chunky Hummus

My best kept secret….well, not anymore.

You’ll need:

  • 1 clove of garlic (crushed)
  • 2 tsp tahini
  • 1 can of chickpeas
  • 2 tbsp fresh parsley
  • Juice of 1 lemon
  • 1tsp salt
  • Half cup of roasted peppers (I used a jar of Cucina grilled peppers from Aldi)
  • Half cup of sundried tomatoes (I used a jar of Cucina tomatoes from Aldi)
  • 1 inch piece of ginger peeled and minced

The how to and what not:

Chuck it all in a food processor and wizz it up.

Yep, it’s that simple! Store in a tupperware. This Hummus will keep in the fridge for up to a week.
